Stone bakeware is perfect for pizza, flat breads and rolls. Because they are made of clay, they maintain their heat and promote an even cooking surface from the middle of the stone to the edges. They also absorb moisture which results in a crisp crust.
Baking stones need to be seasoned prior to first use by rubbing on a bit of nonflavored cooking oil. Never clean them by washing with soap. Due to the porous surface, it will be absorbed and give off a soapy taste to your future recipe(s). Simply scrape off small pieces of remaining food and run warm water over the surface (after completely cool, of course).
Stoneware can be preheated prior to use; however, never place frozen food on a preheated stone, as this can cause it to crack. Instead, place the frozen item on prior to baking in a heated oven.
